    This position makes a variety of bakery items by following established recipes and baking protocols. Some incumbents may be given the responsibility to lead the activities of other bakers and perform advanced baking duties, including the development of new recipes and procedures to provide a wide variety of high quality bakery items. This position has no responsibility for providing care to patients.

    Responsibilities

    • Prepares doughs and batters for baking bread, rolls, biscuits, muffins, cookies, cakes, cobblers, pies, and other desserts.
    • Prepares icings, toppings, and sauces for baked goods by following established hospital recipes.
    • Prepares specialty bakery items such as cheesecakes, croissants, marzipan, tortes, etc.
    • Adheres to manufacturer instructions and standard hospital kitchen procedures when operating machinery and equipment including dough scalers and sheeters, scales, mixers, molders, grinders, ovens, choppers, and slicers to meet daily bakery requirements.
    • Prepares carts, tray lines, and other areas for food service delivery and restocks prepared food items.
    • Uses department-specific computer software to complete purchase and issue requisitions, track inventory costs, forecast production for cafeteria, assist with catering, and predict patient needs based on daily menus.
    • Cleans the bakery area and equipment in order to comply with hospital, county and state sanitation requirements.
    • Performs quality checks on the taste and appearance of bakery goods.
    • Ensures that quantities produced are consistent with production orders.
    • Orders, rotates, and maintains adequate stock levels required for bakery production by estimating the needs of the production schedule.
    • Utilizes baking knowledge and experience to adjust recipes for factors such as altitude, special diet orders, etc.
    • May develop, modify, or experiment with hospital recipes and baking procedures to improve bakery output or services.

    Knowledge / Skills / Abilities

    • Ability to perform the essential functions of the job as outlined above.
    • Demonstrated knowledge of food preparation and baking protocols.
    • Demonstrated knowledge of State regulations regarding proper food handling and sanitation requirements.

    Qualifications

    Qualifications

    Required

    • Two years of institutional baking experience.

    Licenses Required

    • One of the following
      • Current Utah Food Handler Permit issued through Salt Lake County or Davis County Health Department. Some Departments may allow for 30 days to obtain certification upon hire, otherwise, it is due at time of hire. Please refer to your department for specific requirements.
      • Current ServSafe Certification.

    * Additional license requirements as determined by the hiring department.

    Qualifications (Preferred)

    Preferred

    • Previous supervisory experience, depending on the area of assignment.
    • Previous food production experience in a health care setting.

    • This position involves intermediate working conditions in a healthcare setting that may exert up to 50 pounds and may consistently require lifting, carrying, pushing, pulling, or otherwise moving equipment or objects.
